Winter warming soup: Sweet potato soup with ginger

This soup is so simple, with a short set of ingredients and steps to prepare. It’s a great warming winter soup and also pairs well with meals such as Thanksgiving and Christmas.

Ingredients

  • 2 cups of cubed sweet potatoes
  • 1 cup of finely diced carrots
  • 1 onion finely diced
  • 4 cups of organic vegetable stock or home made stock
  • Pinch salt and pepper
  • Ginger – about half the size of a thumb, grated finely
  • A little olive oil

Method:
1. Sauté the onion and carrots until soft
2. Add the cubes of sweet potato
3. Pour in the veggie stock
4. Simmer for about 15-20 minutes
5. Grate In the ginger
6. Blend
7. Serve

The above recipe is going to make about 6 cups of stock which will easily serve a family of 6.

This soup lasts for several days in the fridge in a sealed container

It also makes a great lunchtime meal, serve with some crusty bread.

Being able to do all the preparation in advance makes it a great starter for a dinner party as it just needs warming up at the last second.
