Yummy Strawberry Bread Recipe

This recipe has always been a big hit at every family function with my friends and family. I have now decided to share it, along with my notes on improving the original recipe. This would also make a good breakfast addition, snack, or dessert! Have fun, and see what kind of additions you can come up with to make it your own and improve upon it.

Strawberry Bread:

20 oz. frozen strawberries (the kind with the syrup) - thawed
4 extra large eggs
1 & 1/4 cups vegetable oil
3 cups flour
2 cups sugar
3 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt

Optional:

1 cup chopped walnuts

My additions:

1 tsp. vanilla extract
1 tsp. nutmeg

- Stir wet ingredients (strawberries, eggs, oil, and vanilla extract) to combine.
- Sift dry ingredients (flour, sugar, cinnamon, baking soda, salt, nutmeg)
- Add wet ingredients to dry and stir just to blend.
(- Stir in chopped walnuts)
- Pour in 3 loaf pans (butter and flour bottoms, but NOT sides)
- Bake at 350 degrees for 1 hour or until toothpick comes out clean

(Strawberry bread is often served with cream cheese spread ~ whipped works best)
